Valentine’s Day is approaching and if you like to bring your partner breakfast in bed, I’ve got a quick, easy, adorable breakfast you can share that morning, or any morning! I dub this my Sweetheart Eggs & Toast recipe.
Cook the eggs sunny-side-up, over-easy, over-medium, or over-hard—however each of you prefer. If you don’t eat eggs, you could probably use egg substitute. You could even cook something like pancakes in the egg mold.
The toast recipe is a low carb quick bread made in the microwave. Both the eggs and the toast are in the shape of hearts, with the help of a couple low-cost items from Amazon. This low carb quick-bread is a recipe perfected by one of my dearest friends. Unfortunately she passed in 2015, but I still have this recipe in her handwriting and I treasure it. She taught me so much about cooking, especially how to make things low-carb and gluten-free.
Here we are in our pajamas in the kitchen I had at the time. She would often stay overnight on the weekend, sleeping on our sofa, and then we’d get up and cook together the next day.
I think Roxy would have really enjoyed these heart-shaped ramekins for her bread!

Sweetheart Eggs & Toast with Low Carb Quick Bread

Combine a low carb microwave English Muffin recipe & heart shaped molds for a quick, easy & adorable breakfast-in-bed idea for Valentine’s Day or any day.
Ingredients1/3 C almond flour1 Tbl coconut flour1/4 tsp salt1/4 tsp baking soda1 tsp olive oil (or melted butter)1 tsp honey2 Tbl water1 egg
Combine all ingredients and mix well.
Pour into a small round glass container or a flat bottomed plastic bowl.
Microwave for 2 minutes.
Slice into 2 or 4 slices.
Toast or use untoasted.
